EHEC, or Enterohemorrhagic Escherichia Coli, is a type of pathogenic bacteria that can cause severe gastrointestinal illness in humans. Primarily associated with foodborne outbreaks, EHEC is known for producing Shiga toxin, which can lead to symptoms such as diarrhea, abdominal cramps, and in severe cases, hemolytic uremic syndrome (HUS), a condition that can result in kidney failure. Contaminated food, particularly undercooked ground beef and raw vegetables, is a common source of infection. Stringent food safety practices are essential to prevent EHEC transmission.
